Whipped Plant Ahead Feta Dip with Za’atar and Roasted Tomatoes

Ingredients:
Roasted Tomatoes
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- Salt and pepper
Feta Dip:
- 150 g Plant Ahead Feta
- 1/4 cup cashew milk
- 1 tsp za’atar
- 1 tbsp fresh chives, finely chopped
- Toasted bread slices, for serving
Preparation:
- Preheat the oven to 400°F.
- In an ovenproof dish, toss the cherry tomatoes with the olive oil. Season with salt and pepper. Roast for 20 minutes, until blistered and caramelized.
- Meanwhile, in the bowl of a stand mixer (or using a hand mixer), whip the Plant Ahead Feta and cashew milk on medium-high speed until smooth and airy.
- Spread the whipped feta onto a shallow serving plate or bowl.
- Spoon the warm roasted tomatoes and their flavorful oil over the feta.
- For the finishing touch: Sprinkle the za’atar evenly over the dip and garnish with fresh chives. Serve with toasted bread.
