Radicchio Salad with Roasted Sweet Potatoes and Plant Ahead Blue Cheese

Ingredients:
- 1 small sweet potato, peeled and diced
- 1 tbsp olive oil
- 1/2 head radicchio, thinly sliced
- 1/2 cup quinoa (cooked according to package directions)
- 1/4 cup red or green grapes, halved
- 1/4 cup crumbled Plant Ahead Blue Cheese
Herb & Mustard Dressing:
- 2 tbsp olive oil
- 1 tbsp maple syrup
- 1 tsp whole grain mustard
- 1 tbsp chopped fresh herbs (parsley, mint, cilantro)
- 1 tsp lemon juice
Preparation :
- Preheat the oven to 400°F.
- Toss the sweet potato cubes with the olive oil. Season with salt and pepper. Roast on a baking sheet for 20 to 25 minutes. Let cool slightly.
- In a small bowl, whisk together all the dressing ingredients.
- In a large salad bowl, combine the sliced radicchio, cooked quinoa, grapes, and roasted sweet potatoes.
- Drizzle with the dressing, gently toss, and top with the crumbled Plant Ahead Blue Cheese.
