Marinated Cauliflower Tacos with Chipotle Mayo

Ingredients:
- 1/2 cauliflower, cut into small florets
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp Cajun seasoning
- 1/2 tsp BBQ seasoning
- 4 to 6 small flour tortillas
- 1/2 cup corn (canned or frozen)
- 1 jalapeño pepper, thinly sliced
- 1/4 cup pickled onions
- A few sprigs of fresh cilantro
- 1/2 cup shredded Plant Ahead Tex-Mex
Chipotle Mayo:
- 1/4 cup vegan mayonnaise
- 1 tsp canned chipotle sauce (adjust to taste)
Preparation:
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a bowl, toss the cauliflower florets with the olive oil, paprika, Cajun seasoning, and BBQ seasoning. Season with salt and pepper.
- Spread onto the prepared baking sheet and roast for 20 minutes, flipping halfway through, until the cauliflower is tender and golden.
- Meanwhile, in a small bowl, combine the vegan mayonnaise and chipotle sauce.
- To assemble: Spread a layer of chipotle mayo onto each warmed tortilla.
- Top with the roasted cauliflower, corn, jalapeño slices, pickled onions, and shredded Plant Ahead Tex-Mex. Finish with fresh cilantro before serving.
